Cranberry (Vaccinium oxycoccus)
Cranberries are normally picked in late September and they are at their best after the first frosty nights. These acid berries have a strong flavour. Cranberry is an excellent raw material for bakeries, dairies and for beverage industry, as well as for mill products, gelés, jams and different kinds of seasonings and marinades.
Cranberry products are also widely used in pharmaceutical industry and in natural product industry. The health effects of cranberry are connected to the fenolic compounds. It has been seen that the fenolic compounds act as antioxidants, for instance in preventing cancers, controlling the growth of viruses; they are antibacterial and counteract inflammations and allergies.
