Blackcurrant (Ribes nigrum)
Redcurrant (Ribes rubum)
Both the blackcurrant and the redcurrant are healthy berries. Blackcurrant contains a lot of vitamin C. Of the wild berries, only the cloudberry contains more vitamin A than the blackcurrant. The seeds of the blackcurrant contain a lot of gammalinolenic acid, vitamin E and the important polyunsaturated fatty acids which have been proved to, for instance, lower the cholesterol. The most useful form of using the blackcurrant would be one in which the seeds are crushed; for example, as 100% berry powder. Blackcurrant contains more flavonoles than the fruit and vegetables mostly in use. Blackcurrant has a particularly high content of antocyans (2000-5000 mg/kg). Also the redcurrant contains a lot of vitamin C, however, somewhat less than the blackcurrant.
The currants are used in many ways in the beverage, dairy and bakery industries.
